Let me begin my saying this, I hate fish. I just don't like it. Shrimp is a different story but fish, yuck! So why a fried fish recipe. Well I'm not the only one who eats around here and just because I personally don't like something doesn't mean I wont cook it for you! Tobs loves fish and the other day he was craving it, he wanted to go to a fast food fish restaurant but instead we went to the grocery store and I picked up some talapia and vowed to him that I would fry him up some fish! So online I went to search for an easy fish fry recipe. I found tons, but chose this one. It was pretty easy to make though I have to admit it was a bit messy, but then again it could just me that I'm a messy person.

Blueberry Loaf
I hate for food to go to waste, so when I saw I had forgotten about some blueberries I purchased I had to act fast! Blueberry loaf to the rescue. This is a simple recipe and can be made as muffins instead of a loaf if you like.
Ingredients
1 egg
1/4 cup oil
1/2 cup of milk
1 1/2 cups of flour
1/2 cup of sugar (i used brown sugar)
2 tsp baking powder
1/2 tsp salt
1 cup fresh blueberries (you could use frozen if that's what you have on hand)
Start by preheating your oven to 400 degrees, next spray your loaf pan or muffin tins with non stick spray.
Next beat an egg in a small bowl until its frothy, then add your oil and milk. In a separate bowl sift all of your dry ingredients together and then add your blueberries. Stir. Make a well in the center and pour in the liquid ingredients. Mix together until all the dry ingredients are moist, do not over mix, the batter will be lumpy
Now its time to pour your mix into your loaf pan (or muffin tins). If you are using a muffin tin use an ice cream scoop to fill the tins, I've found this fills them just right.
Bake for about 18 to 20 minutes or until golden brown. Serve warm with a pad of butter and a nice cold glass of milk!

Fideo con Pollo (Chicken and shells)
This recipe is a go to recipe that I make when I'm too tired to cook, too tired to think and just too tired overall. I call it Fideo con Pollo or Chicken and shells (cause the pasta is little shells). It's very easy to make and pretty quick too. Couple it with a couple of warm tortillas (flour or corn, your choice!) and you've got yourself one superb meal. So here we go!
Ingredients
2-4 chicken breast cubed
1 bullion cube ( I like to use tomato/chicken flavor)
1 can diced tomatoes and chilies
1 package of fideo
1 tablespoon of oil
Water
Start by heating1 tablespoon of oil (olive/vegetable etc) in a large pan, cook cubed chicken till no longer pink. Add fideo and brown to your liking. Once fideo has been browned add water to pan just enough to cover your fideo and chicken half way. Add your bullion cube and simmer, make sure to keep an eye on it and add water as needed. Once your bullion cube has dissolved add your can of diced tomatoes and chilies, simmer until fideo is tender. I like this dish a bit soup like, but you can cook most of the water out if that's your preference. Last but not least, heat up your tortillas and enjoy! FYI all of this was gobbled up before I had a chance to take a picture of the final product.
