Blueberry Loaf

I hate for food to go to waste, so when I saw I had forgotten about some blueberries I purchased I had to act fast! Blueberry loaf to the rescue. This is a simple recipe and can be made as muffins instead of a loaf if you like.

Ingredients
1 egg
1/4 cup oil
1/2 cup of milk
1 1/2 cups of flour
1/2 cup of sugar (i used brown sugar)
2 tsp baking powder
1/2 tsp salt
1 cup fresh blueberries (you could use frozen if that's what you have on hand)

Start by preheating your oven to 400 degrees, next spray your loaf pan or muffin tins with non stick spray.
Next beat an egg in a small bowl until its frothy, then add your oil and milk. In a separate bowl sift all of your dry ingredients together and then add your blueberries. Stir. Make a well in the center and pour in the liquid ingredients. Mix together until all the dry ingredients are moist, do not over mix, the batter will be lumpy

Now its time to pour your mix into your loaf pan (or muffin tins). If you are using a muffin tin use an ice cream scoop to fill the tins, I've found this fills them just right.

Bake for about 18 to 20 minutes or until golden brown. Serve warm with a pad of butter and a nice cold glass of milk!
