Fideo con Pollo (Chicken and shells)

This recipe is a go to recipe that I make when I'm too tired to cook, too tired to think and just too tired overall. I call it Fideo con Pollo or Chicken and shells (cause the pasta is little shells). It's very easy to make and pretty quick too. Couple it with a couple of warm tortillas (flour or corn, your choice!) and you've got yourself one superb meal. So here we go!

Ingredients
2-4 chicken breast cubed
1 bullion cube ( I like to use tomato/chicken flavor)
1 can diced tomatoes and chilies
1 package of fideo
1 tablespoon of oil
Water

Start by heating1 tablespoon of oil (olive/vegetable etc) in a large pan, cook cubed chicken till no longer pink. Add fideo and brown to your liking. Once fideo has been browned add water to pan just enough to cover your fideo and chicken half way. Add your bullion cube and simmer, make sure to keep an eye on it and add water as needed. Once your bullion cube has dissolved add your can of diced tomatoes and chilies, simmer until fideo is tender. I like this dish a bit soup like, but you can cook most of the water out if that's your preference. Last but not least, heat up your tortillas and enjoy! FYI all of this was gobbled up before I had a chance to take a picture of the final product.

Only had a can of Chili Ready tomatoes, just use what you have on hand.
